Bites w/ Flights pairing
Anbai Plum Wheat paired with Japanese wagyu short rib shiso wrap (wagyu short rib marinated in sesame oil and salt and wrapped in shiso, pickled daikon, plum paste, soybean paste and pickled burdock)
Why it works: The base beer is a higher alcohol version of a witbier style, infused w/ locally grown green sour sour plums and finished w/ a pinch of Japanese sea salt this acts as a complement to the dish in both the beginning and end of the dish matching the light tartness and poignant salty/pickled elements of the dish. The beer has the ability to also cleanse from the fat of the short rib and the flavors work in concert with the spicy freshness of the shiso. Delicious!
Dai Dai Pale Ale paired with "Asian Pigs in a Blanket" (marinated braised pork belly in a sweet and salty sauce topped with spicy kimchi)
Why it works: Dai Dai has a unique flavors with an east meets west vibe. The beer is loosely based on an english ale with a solid malt foundation but infused with a rare orange called Fukare Mikan which also uses the peel for a unique spice component. The pungent and spicy nature of the kimchi works with the spice of the dish while the hops allow for the spice of the kimchi to linger. The malt of the beer helps accentuate some of the rich umami flavors of the braised pork.
Ginger Brew paired with Jamaican Jerk Pan Seared Duck Hearts (topped with cilantro and bonito flakes)
Why it Works: We start with a VERY herbaceous, citrusy, slightly sweet and spicy dish. These Caribbean flavors lend themselves wonderfully to the spice of the beer that is both well hopped and brewed with raw ginger. The citrus flavors match the ginger roots tang and it elevates the perceive spice in the dish while the overall flavor help combat some of the gamey nature of the organ meat. This pairing is very synergistic while the accentuation of the heat appears to leave you wanting more.

Spice- Fukare Mikan peel (means very unique in Japanese), its a wild mandarin with 1500 yrs of history in Japan and is only grown around Mt. Tsukaba (near the brewery)
